Squid Stir fry
Ingradients
1. Squid / koondhal / calamari / kanava – 1/2 kg
2. Turmeric powder – 1/4 tsp
Pepper powder – 1/4 tsp
Garam masala powder – 1/4 tsp
Salt – As required
3. Coconut oil – 1 tbsp
4. Mustard seeds – 1/2 tsp
Cumin seeds – 1/2 tsp
5. Ginger – 1 inch, finely chopped
Garlic – 5 cloves, finely chopped
Onion – 1 cup, finely chopped
Green chilies – 4, diagonally sliced
Curry leaves – 1 sprig
7. Turmeric powder – 1/4 tsp
Garam masala powder – 1/2 tsp
Pepper powder – 1/2 tsp
8. Grated coconut – 1 – 1.5 cups
9. Salt – To taste
10. Curry leaves – Few, torn
Coconut oil – 1 tsp
Method
1) Clean and cut squid / kanava into very small pieces.
2) Mix kanava, 1/4 tsp turmeric pwdr, salt, 1/4 tsp pepper pwdr, 1/4 tsp garam masala powder and cook covered for about 10 – 12 minutes until kanava pieces are done. Drain excess water from cooked kanava and set aside.
3) Heat 1 tbsp coconut oil and splutter mustard seeds and cumin seeds. Next add finely chopped ginger and garlic and saute for a minute. Add chopped onion, green chilies and curry leaves. Saute for 5 – 6 minutes and then add turmeric powder, garam masala powder and pepper pwdr. Saute for a minute.
4) Finally add grated coconut and cooked kanava. Mix well. Taste-check for salt. Saute for 2 – 3 minutes. Switch off. Add a few torn curry leaves and a tsp of coconut oil. Keep covered for 15 minutes. Serve koondhal thoran with hot rice, moru curry and a mezhukkupuratti.
