Quinoa and Pichuberry Muffins

 Quinoa and Pichuberry Muffins  

Ingredients

    3/4 cup fresh pichuberries, pureed (also found as golden berries)
    2 tablespoons plain Greek yogurt
    2 tablespoons raw honey
    2 tablespoons maple syrup
    1/2 teaspoon vanilla extract
    1 egg
    1/2 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1 cup oat flour
    1 cup cooked quinoa
    1/4 cup fresh pichuberries, sliced
    1/4 cup chopped walnuts

Instructions

    Preheat the oven to 350ºF.
    Mix the pureed pichuberries, yogurt, honey, maple syrup, vanilla and egg in a bowl.
    Mix all the other ingredients in another bowl.
    Grease and flour 2 cupcake baking trays. You can use cupcake cups if you want.
    Pour 2-3 tablespoons dough for each cupcake, and bake for 40 minutes.
    Let cool for 20 minutes before serving.
