 Peppery Mushroom and Brown Rice


Ingredients

    1 1/2 cups celery, coarsely chopped
    1 large onion, coarsely chopped
    Hand full of garlic cloves, crushed
    2 tbsp olive oil
    3 cups water
    1 cup brown rice
    2 cups mushrooms quartered
    1 teaspoon salt
    1/2 teaspoon red chilli flakes
    1/2 tbsp crushed peppercorns
    1/4 teaspoon pepper

Method

In a large skillet, sauté celery, onions and garlic in olive oil until tender. (about 5mins). Add chilli flakes and crushed peppercorns. Add the remaining ingredients and bring to a boil. Cover and allow to cook on a low flame until rice is tender and liquid is absorbed (about 45 mins). Allow to stand covered for 10 minutes before serving. Fluff rice lightly with fork and serve.
