Healthy Recipe: Baked Bean Wraps

Ingredients
• 4 whole wheat tortillas
• 1 onion, sliced
• 1 green capsicum, deseeded and cut into juliennes
• 1 tomato, deseeded and sliced
• 2 tbsps olive oil
• 1 tbsp garlic, chopped
• 1 tbsp tomato ketchup
• 1 ½ cups baked beans
• Salt to taste
• Mint sprigs for garnishing
Method
• Heat the olive oil in a pan, add the garlic and sauté till golden brown.
• Add the onions and sauté till pink. Add the green capsicum and sauté for a minute.
• Add tomatoes and sauté for a minute. Add the tomato ketchup and sauté for a minute.
• Add baked beans and salt and sauté for 2 minutes.
• Heat a tawa, or griddle, and warm the whole wheat tortillas.
• Once they are warm, place them on a chopping board or any other flat surface and spread the baked beans mixture evenly onto it.
• Roll the wraps properly and cut them diagonally.
• Wrap the cut rolls into the aluminium foil and place them onto the serving plate.
• Garnish with a sprig of mint and serve immediately.
