Pineapple chunks - 1 cup, frozen
Pineapple juice - 1/2 cup, unsweetened and chilled OR tender coconut water
Thick coconut milk - 1/2 cup
Sugar - 3 tbsps OR Honey OR Brown sugar
Ice cubes - as required
Fresh pineapple wedges for garnish
Blend all the above ingredients except ice cubes till smooth.
Add ice cubes in serving glasses, pour the blended smoothie and garnish with pineapple wedges and/or a maraschino cherry.
Blend 1 cup grated coconut with 1/2 cup water to a smooth paste. Extract the coconut milk and use as required.
You can add frozen banana for a creamier textured smoothie. If you add banana, reduce sugar quantity.
