Chicken : 1 kg
Finely Chopped Green Chilly : 2
Crush Coriander Seeds (Dhania) : 1/2 tsp
Cumin Seeds (Zeera) : 1/2 tsp
Fennel Seeds (Saunf) : 6
Garam Masala : 1/2 tsp
Ginger Garlic Paste : 1 tbsp
Lemon Juice : 2 tbsp
Mustard Oil : 2 tbsp
Mustard Seeds : 1/2 tsp
Refined Oil : 2 tbsp
Onions : 1 cup
Pepper Corn : 1/2 tsp
Red Chilly Powder : 1/2 tsp
Dried Red Chilies : 4-6
Salt to taste
Chopped Tomatoes :1 cup
Turmeric : 1/2 tsp
Yogurt : 1 cup
Begin by marinating the chicken with a little bit of curd, turmeric powder, salt and keep it aside for 20 minutes before you begin preparing Achaari Chicken.
For basic masala preparation pour oil in a non-stick pan. Add chopped onion and salt. Salt will help in releasing the moisture and let the onions cook a little faster. Saute till golden brown. Now add some ginger, garlic paste along with tomatoes, red chili powder, green chilies and saute for a minute.
Now slow the gas and put the lid on for 3-5 minutes. Once all ingredients mingle within each other remove the lid and add fresh yogurt or curd into it. Whisk the mixture, cover the masala with lid and let it cook for another 2-3 minutes. Once the masala gets perfectly cooked, mash it and add chicken pieces in it.
Mix well, cover it and let it be cooked for another 15 minutes. Once it is done, slow the flame and sprinkle garam masala and chopped mint over it.

Take another pan and add mustard oil. Add some crushed red chilies, mustard, cumin seeds, fennel seeds, pepper corns and fenugreek seeds and crushed coriander seeds.
The aroma and crackling sound of all these ingredients will give you a feel of achaari recipe being made!
Now add this achaari seasoning over the cooked chicken, chopped coriander, small amount of lemon juice to give freshness to Achaari Chicken. Now put the lid on. Let it cook for 2-3 more minutes. Nice and delicious gravy will form.
Garnish it with some mint, coriander and red chili. Your flavorful and tasty Achaari chicken is ready to be served.
