Date Pancakes
Ingredients
For the pancakes
1/2 cup rice flour (chawal ka atta)
2 tbsp cornflour
2 tbsp low fat milk, mixed with 3 tablespoons water
2 tsp sugar
A pinch of salt
To be mixed into a stuffing
1/4 cup deseeded and chopped dates (khajur)
1 tbsp chopped raisins (kismis)
1 tbsp chopped cashewnuts (kaju)
1 tsp chopped walnuts (akhrot)
2 tbsp tutti-frutti
A pinch of nutmeg (jaiphal)
2 pinches of cinnamon (dalchini) powder
A pinch of clove (laung/lavang) powder
Other ingredients
1 tsp oil for cooking
1/2 tsp oil for greasing
Method
For the pancakes
Mix all the ingredients together to make a batter of pouring consistency.
Divide it into 6 equal portions.
Grease a non-stick pan with little oil, pour a portion of the batter on it and spread with a laddle to make a 125 mm. (5") diameter pancake.
Cook on both sides, using a little oil, till light spots appear. Keep aside.
How to proceed
Place a pancake on a flat surface, put one-sixth of the stuffing on it.
Fold to make a semi-circle.
Repeat to make five more pancakes. Serve immediately.
