 Vanilla Sponge Cake

Ingredients
• 3 large eggs
• 3/4 cup plain flour (maida)
• 1/2 cup castor sugar
• 1 tsp vanilla essence

Method
• Sieve the flour. Keep aside.
• Beat the eggs and sugar in a deep bowl very well using an electric beater, until it thickens and doubles in quantity.
• Add the vanilla essence and mix lightly.
• Fold in the well-sieved flour carefully and mix gently with a spatula.
• Pour the batter into a greased and flour-dusted 175 mm. (7") diameter tin.
• Bake in a hot oven at 200°C (400°F) for 20 to 25 minutes.
• The cake is ready when it leaves the sides of the tin and is springy to touch.
• Take it out from the oven and leave it for a minute. Loosen the sides with a knife, invert the tin over a rack and tap sharply to remove.
• Keep it aside to cool and use as required.
