Cold chicken and mayo sandwich


Ingredients

1. White / brown bread slices – 8 – 10

2. Chicken, cooked and shredded – 1 cup, (Boil / Cook raw chicken cubes in 2 tsp oil adding salt and pepper. Cool down and shred into small pieces)

3. Cabbage – 1/2 cup, thinly sliced

4. Carrot – 2 tbsp, grated

5. Mayonnaise – 1/4 cup + 1 – 2 tbsp or as required

6. Salt, pepper – To season

Method

1.Combine shredded chicken, sliced cabbage and grated carrot with mayonnaise.

2.Season with salt and pepper.

3.Cut the edges of the bread.

4.Spread the chicken – mayo mixture.

5.Cut into halves or triangles.

6.Enjoy with a glass of orange juice.
